French Beans with Coconut

Neutral by nature, French beans are very nutritious. It contains protein, fat, calcium, phosphorus, and vitamins A, B, D. they are also rich source of iron thus good for blood cells production. By adding coconut to it, it becomes rich in healthy fats and delicious in taste.

Serves: 4

Ingredients:

French beans: 500 g
Coconut: fresh 50g
Mustard seeds: 1 tsp
Ginger: 1 cm piece
Green chilly: 1 small
Garlic: 5-6 cloves
Turmeric powder: 1 tsp
Coriander leaves: chopped 2 tbsp
Lemon juice:  2 tsp
Sugar: 2 tsp
Oil: 1 tsp
Salt: 2 tsp

Process:

  • Finely chop French beans.
  • Heat the oil in pan, and add the mustard seeds, when seeds crackle, add French beans, salt and turmeric powder and mix well.
  • Sprinkle 2 tbsp of water and cover it till cook.
  • Now in a blender take coconut, coriander leaves, ginger, garlic, chilly, lemon juice, sugar and salt, and blend it. It might be dry paste due to coconut, don’t add water to it.
  • When beans get cooked, add this paste at last and let the aroma of this paste cover the beans.
  • Cook for more 5 mins.  And garnish with coconut and coriander.
  • Serve hot.
