Paushtik Muthia

Why not if we can make something healthy out of leftovers??   Generally I do not favor the use of leftovers, but especially in case, it’s really healthy. Muthia can be prepared out of left over dal, rice, khichdi, even left over rotis can be used. In this particular recipe I have used boiled mung and left over rice to make it. And to make it more nutritious, I have added Nachni flour and Jowar flour to it which makes it rich in calcium and iron.



Preparation time: 5 mins

Cooking time: 15 mins

Serves: 4

Ingredients:

For muthia:

Wheat flour: 1 cup

Nachni flour:  ¼ cup

Bengal gram flour: ¼ cup

Jowar flour: ¼ cup

Cooked rice/khichdi: 1 cup

Boiled mung: ½ cup

Soda bi carb: 1 pinch

Turmeric powder: 1 tsp

Chilly garlic paste: 1 tbsp

Curd: 2 tbsp

Oil: 1 tbsp

Salt: 2 tsp

For tempering:

Sesame seeds: 1 tbsp

Curry leaves: 4-5

Mustard seeds: 1tsp

Sugar: 1 tsp

Fresh coriander leaves: to garnish

Process:

  • In a vessel mix all the flours, boiled mung, rice, curds, oil, turmeric powder, chilly garlic paste, soda bi carbs, now knead the mixture very lightly, take care not to knead it tight or the trapped air will be evaporate and muthia would not be soft and fluffy.
  • Now prepare the rolls out of the dough, with the help of your palm. Now these rolls can be baked in the oven, or steamed in the cooker without the whistle or microwave.
  • Traditionally the muthia can be prepared by steaming them. Take sufficient water in a pan and place the muthia over it covering them in a way that they can get enough steam.
  • After 10-12 mins, check it with spoon or knife or toothpick, if it comes out clear, then muthia is ready.
  • Now take the rolls out and let them cool down.
  • Once cooled down, cut the rolls in thin slices.

Tempering:

  • Heat the oil in pan, add mustard seeds,  when seeds starts to crackle, add curry leaves and sesame seeds, now add the slices to it and toss well, add a tsp of sugar and garnish with coriander.
  • Serve hot with green chutney and buttermilk.
